From Farm to Fork: With Spring on the doorstep, Cocina launched a new seasonal menu

Cocina, the award winning restaurant at the 4 star Casa Hotel, has continued its commitment to providing a truly ‘Farm to Fork’ dining experience with the launch of its new Spring menu. Incorporating the latest seasonal produce from Walton Lodge Farm in Chesterfield, the new menu includes dishes such as ‘A Taste of Walton Lodge Pork’, comprised of pig cheek, fillet, crispy ear and belly, served with creamed potato and braised red cabbage. Casa is independently owned by entrepreneur, Steve Perez and Walton Lodge Farm, which is just four miles from the hotel, provides the majority of produce for the hotel, including beef, lamb, pork and eggs. Casa uses up to 1000 free range eggs a week and the bacon and sausages served in the hotel are made to their own recipe, using the produce from Walton. Walton Lodge Farm is under an organic conservation program and produces the vegetables used to create award-winning dishes at Casa, including parsnips, leeks, celery, onions, cucumber, courgettes, sprouts, cabbage and lettuce. The farm also produces all of the herbs for the hotel, including purple basil, mint, chives, rosemary and thyme, while Steve Perez hand picks the strawberries for the hotel in the summer. Steve lives at Walton Lodge Farm and established it with Farm Manager, John Brailsford before the hotel opened in November 2010. It was a natural progression for the farm to supply Casa with high quality, better tasting produce. Andy Wilson, the head chef at Casa commented: “We are really proud of Walton Lodge and how it supplies our restaurants, so we shout about it quite a lot. We have received great feedback about the food and it often gets a positive mention on Trip Advisor. I think the main pull for the customers is that they know where the produce comes from, and are confident that what they choose to eat is guaranteed to be of the highest quality.
